A healthy twist to the classic Mexican beverage, AKA..almond rice milk.
Light, creamy and so yummy.
Dates add a lovely sweetness making this a delicious drink, plain.
Cinnamon is traditional, but…
I took the cardamom route. Mmmm.
Squeezing the milk out might be a little time consuming. But, so worth the effort.
Drink plain or enjoy with unsweetened cereal.

Ridiculously Healthy Horchata
1/2 cup white long grain rice, rinsed and drained
25 raw almonds
6 Noor dates, pitted
1/8 teaspoon salt
2 cups water
1. Combine all ingredients in a blender (I soak directly in the blender, so I don’t have to dirty another dish). Let soak overnight.
2. Blend for 3-5 minutes (depends on the power of your blender), until smooth.
3. Strain mixture in batches, using a Nut milk bag/thin dish towel. Simply place a strainer over a bowl, and place the dish towel over the strainer. Pour horchata in batches, into the dish towel lined strainer, gather all four corners and lift up. Squeeze until all milk is extracted. Discard pulp, between batches.
3. Pour milk into serving glasses and enjoy with/without ice.
