Avocado Agua Fresca

Four simple ingredients –> avocado, coconut water, honey and lemon juice. It’s creamy, light, refreshing and OH-SO-GOOD-FOR-YOU. 

I’m seriously on a avocado KICK.

That’s how obsessed I am right now. 

This is a must – every day of the year! Light breakfast. Snack. Just any time. 

Creamy yet light and refreshing!!

I just side tracked here and added coconut water into my agua fresca 😉

Keep calm and DRINK ON!

(Add a splash of rum and/or coconut rum and you have yourself a healthy cocktail….Shh)

Avocado Agua Fresca

Ingredients

1 1/2 cups coconut water (I used my favorite )

1/4 cup packed ripe avocado, about 1/2 medium (don’t bother mashing, just scoop and gently pack into the cup)

2 tablespoons honey, refer notes

1 tablespoon lemon juice

Preparation:

1. Into a blender, add all ingredients and blend until smooth.

2. Pour into a tall glass, filled with some ice.

3. Drink! 

Makes 1 tall or 2 small servings


Notes:

The amount of honey depends on the sweetness of coconut water that you use. Some coconut waters tends to be naturally more sweeter than others. So, blend, taste and add a splash more honey, if not sweet.

  1. I didn’t know what an Agua Fresca was :P. My bad! I love my coconut water everyday! It just feels so fresh after drinking it! Adding an avocado to it is such a great idea! Also, love the pretty pastel green color 🙂
