Overnight Dark Chocolate Hot Oatmeal

Decadent, rich, luxurious and creamy hot oatmeal is made only with milk, oats, almond butter, cocoa powder and honey. It comes together in just 5 minutes in the microwave!

Oatmeals are one of those healthy and filling breakfasts that we love around here. But, it’s not practical on hectic weekday mornings and those quick-cooking ones just doesn’t taste the same. Then came overnight oats to the rescue! Soak oats and milk the previous night and you wake up to a nutritious breakfast waiting for you in the refrigerator. But, I tend to crave for a hot bowl on cold winter mornings and this bowl warms my soul with all that chocolatey goodness and it is totally guilt-free:)

This recipe is adaptable for all your dietary needs

Use almond milk for DAIRY-FREE

Use gluten-free oats for GLUTEN-FREE

Use almond milk and maple syrup/ Bee free honey for VEGAN

Use Sunbutter for NUT-FREE

Just 5 minutes in the microwave after a long soak overnight is all it takes for a creamy, hot bowl that feels like you have slaved stirring over a hot stove in the morning.  The almond butter makes it rich and creamy and cocoa powder gives that chocolatey decadence.

You start the night before – soak oats, milk, almond butter and cocoa powder in the refrigerator. Pop the bowl in the microwave and hot oatmeal is ready by the time the kids are done brushing their teeth. There is no reason to skip breakfast now and especially when it is this healthy and indulgent. Kids will keep begging for more…..

Top with whatever your heart desires

Overnight Dark Chocolate Hot Oatmeal

Ingredients:

2 cups milk (whole milk or 2%)

1 cup old-fashioned oats (I used Quaker Oats )

1/4 cup almond butter

2 1/2 tablespoons cocoa powder

2-3 tablepoons honey

To serve,

Sliced bananas

Sliced almonds

Mixed berries

additional almond butter, optional

Preparation:

1.The night before, combine milk, oats, almond butter and cocoa powder in a medium size microwavable bowl (don’t bother stirring), cover with a plastic wrap and refrigerate overnight.

2. Uncover and microwave on high for 5 minutes, until hot and creamy.

3. Stir in honey and transfer to serving bowls.

4. Top with sliced bananas, almonds, berries and/or additional almond butter. Enjoy hot.

Makes 2 servings
