5-minute Sunbutter Cups

If you have a child with peanut allergy like mine,  then you can certainly understand the challenges in maintaining a peanut-free lifestyle for the entire family. At times, the child feel that he/she misses out on the popular treats like Snickers or peanut M&Ms or peanut butter cups especially when they see friends enjoying one. “I wonder how a peanut butter cup really taste like…..” once she sighed and I hugged her tight…

Enter these Sunbutter cups – salty, sweet, fudgy, chcolatey and above all, it tastes very much like a peanut butter cup! It is creamy with a slight crunch from the tiny salt crystals…. this will become your favorite homemade candy, even if you are a peanut butter lover!!!!




Sunbutter is made with sun flower seeds and is a great peanut butter substitute. We always stock almond butter and sunbutter and use it for various recipes in lieu of peanut butter at home. Though we love almond butter, Sunbutter contributes a peanut taste to recipes that we want to enjoy at times. Please note that I am NOT sponsored to say this.

These cups are incredibly easy that it just takes 1 1/2 minutes in the microwave. Kiddos would love making these and sharing with their friends or just saving it for themselves. A great homemade candy! And did I say easy?

Melt chocolate chips, Sunbutter and coconut oil in the microwave until smooth…..

Stir in vanilla and salt. Pour into muffin pan lined with cupcake liners and chill.

Notes:

Sunbutter (I used natural) can also be found in all grocery stores.

-Please do not overfill the cup when measuring the Sunbutter. We will need a scant 1/2 cup measure

-Paleo recipes might or might not use vanilla extract, so you can certainly skip if required.

-Use vegan chocolate chips for vegan Sunbutter cups

5-Minute Sunbutter Cups

Ingredients:

1 cup semi-sweet chocolate chips (6.5 ounces by weight)

1/2 cup Sunbutter, natural

1 tablespoon coconut oil

1/2 teaspoon vanilla extract

1/2 teaspoon salt

Preperation:

1.Place 6 paper liners in a standard muffin pan and set aside.

2. Place chocolate chips, Sunbutter and coconut oil in a medium microwave safe bowl.

3. Microwave for 1 1/2 minutes, until fully melted (stir every 30 seconds to combine).

4. Stir in vanilla extract and salt.

4. Divide melted mixture evenly into the 6 paper cups, smooth top and place pan in the refrigerator for at least 4 hours to set.

6. Store Sunbutter cups in the refrigerator.

Makes 6 cups
