Roasted Broccoli and Sun Dried Tomato Hummus

Finger licking gooood! Roasted broccoli, garlic and sesame seeds blended with sun dried tomatoes and garbanzo beans  makes the most delicious hummus you’ve ever tasted!

All hummus fans, look what I made today…..

You will never go back to the same old hummus again!  And it has a green vegetable people. Broccoli,garlic, sesame seeds and red pepper flakes , got to have some spice:) roasted in olive oil and then blended with canned garbanzo beans and sun dried tomatoes. I know…I know….there is no tahini in the recipe. But, there are sesame seeds and roasting them along with broccoli brings out the nuttiness.

Not able to wait for me to be done with the pictures, Sophia was trying to get every bit left in the food processor (don’t worry..the sharp blade was in the sink) with pita bread. She couldn’t believe that some thing with broccoli could taste that good 🙂 Then the other two joined and polished off the entire bowl of hummus, and were too full to have dinner. This stuff is delicious guys!

I peeled broccoli stems, tossed  with salt, pepper and olive oil and roasted them in a separate  pan along with broccoli for about 10-15 minutes. Was great dipped in hummus. Can we get any healthier than this?

  • Try to get every last sesame seed from the pan after roasting. A rubber spatula works fantastic.

Ingredients:

Roasted broccoli

3 ounces broccoli florets, large ones but in half (about 1 1/2 cups)

4 cloves garlic, peeled

1/4 teaspoon salt

1 teaspoon red pepper flakes

1 tablespoon sesame seeds

2 tablespoons extra virgin olive oil

Other ingredients

1 x 15 ounce can garbanzo beans, drained and rinsed

2 tablespoons extra virgin olive oil

1/4 cup sun dried tomatoes, oil packed

1/2 cup water

1/4 teaspoon salt

1 teaspoon sugar

Preperation:

To make roasted broccoli,

Preheat oven to 400 degrees. Have a 6-inch cast iron skillet or any other oven safe pan ready.

Toss all ingredients (under roasted broccoli) together in the skillet.

Bake for 15-20 minutes until roasted. Place skillet on a wire rack to cool completely.

To make hummus,

Add all other ingredients and roasted broccoli into a food processor and process until finely ground, 2-3 minutes. A rubber spatula comes in handy to remove every last sesame seed from the skillet.

Serve with pita chips, pita bread, veggies or just a spoon.

Makes about 6 servings

  1. Oh my goodness! I am a hummus lover! My finace and I love putting it on our chicken as well and cooking it in the oven! DEFINITELY going to have to try this! Sounds amazing!
