These bite size beauties are my solution! Kiddos refuse to believe that these truffles are indeed good for them! Dates, almond butter, cocoa powder and coconut are the 4 main ingredients. Your oven, stove-top and even microwave can take it easy today!
Moist and soft Medjool dates grinds easier and no chopping required! Remove the pits, add into a food processor along with almond butter and process until finely ground. Though the mixture looks ground in just under a minute (thanks to the soft medjool) , if you let it run for a full two minutes the dough starts to gather and is much more smoother. Add cocoa powder, coconut and vanilla extract ,let the machine run for another 30 seconds. Shape, roll and pop them into your mouth! Chilling the truffles gives them a slightly firmer texture and extends the shelf life.
No-Cook, Guilt-Free Truffles
16 medjool dates, pitted
1/2 cup almond butter
3 tablespoons dutch process cocoa powder
1/2 cup sweetened shredded coconut
1 teaspoon vanilla extract
1/2 cup sliced almonds, chopped
Combine dates and almond butter in a food processor. Process for about 2 minutes, until finely ground.
Add cocoa powder, coconut and vanilla extract, process for 30 secs, until thoroughly combined.
Roll into 1 tablespoon measure balls and then roll each in chopped almonds.
Store truffles in refrigerator.
Makes 22-24 truffles
